Great point, and just to extend the thought… “I’m curious” is a great alternative to “I’m interested” more broadly.

For example, when presenting yourself in a job interview, saying “I’m interested in…” has a subtle double-meaning, while “I’m curious about…” has an altogether more inviting tone.
